Yummy grilled salmon with mixed veggies and brown rice

Our van comes equipped with full cooking equipment (pots, pans, etc), a propane gas stove (for outdoor cooking), an induction stove top (for indoor cooking) and an 80L fridge (not your home size fridge but roomy enough for fresh groceries for several days). 

Everybody eats/cooks differently, so the below list is merely a suggestion based on our favorite local grocery store Trader Joe’s:

  • instant coffee

  • all kinds of pasta

  • tomato sauce in a jar

  • tuna in a can

  • chicken in can

  • beans in a can

  • corn in a can

  • fresh veggies that are not too bulky (eg squash, mini peppers, mushrooms, cherry tomatoes, etc)

  • instant ramen soup

  • mac and cheese in a box

  • peanut butter

  • frozen salmon that you can store in the small freezer section

  • marshmallows, chocolate (TJ’s milk chocolate truffle works best) and graham crackers for smores

  • crackers, popcorn and chips for snacks

  • apples, tangerines and bananas for snacks

  • whole wheat tortillas and shredded cheese for quick quesadillas in the pan

  • loaf of bread and deli cheese and meat for snacks

  • pickles in a jar

  • ready to eat salad

  • meat for barbecue

  • your favorite sauces for barbecuing

  • onions and garlic

  • parsley

  • pancake mix in a box

  • eggs for an omelette breakfast

  • milk and instant oatmeal or cereals for a quick breakfast, add honey and berries to make it more yummy
